Empirical Meat Science for Maximum Line Yield
Eliminating stuffing horn friction and split casings across Handtmann VF, Vemag Robot, and Frey filling systems.
Tested and Certified on Leading High-Speed Linking Platforms
Continuous vacuum stuffers, hydraulic piston stuffers, and automatic hanging lines.
Handtmann
Fully compatible with automatic casing holding devices (HV 414 / HV 416). High linking speeds up to 1,800 portions/minute.
Vemag
Optimal casing tension with Vemag LPG208/LPG209 length portioning machines. Minimizes casing tail wastage.
Frey & Risco
Smooth continuous flow for both fine emulsion frankfurters and coarse bratwursts with minimal shear stress.
Stuffing Horn Calibration Reference Table
Matching stuffing horn diameters with caliber sizing for optimal meat yield and burst prevention.
| Natural Casing Caliber | Horn Diameter | Typical Product Application |
|---|---|---|
| 18/20 mm Sheep | 9–10 mm | Mini Snack Wieners |
| 20/22 mm Sheep | 10–11 mm | Frankfurters, Merguez |
| 22/24 mm Sheep | 11–12 mm | German Bratwurst |
| 24/26 mm Sheep | 12–13 mm | Grill Sausages |
| 26/28 mm Sheep | 13–14 mm | Heavy Grilling Links |
| 32/34 mm Beef | 18–20 mm | Thuringian Bratwurst |
| 37/40 mm Beef | 22–24 mm | Ring Bologna & Liverwurst |
| 43/46 mm Beef | 26–28 mm | Kettle Cooked Rings |
Sausage Production Line Troubleshooting Matrix
Diagnostic solutions for casing burst, caliber variance, and smoke color inconsistency.
Casing Bursts at Twisting Link
Stuffing horn diameter too large, overfilling volume, or inadequate soak duration.
Downsize horn by 1mm or increase soaking time in +30°C water to 45 minutes to restore natural collagen suppleness.
Uneven Sausage Lengths
Inconsistent stuffer brake tension or caliber variance beyond ±1mm.
Switch to Darezini Grade A+ calibrated casings (guaranteed ±0.5mm) and adjust casing holder brake ring pressure.
Pale or Patchy Smoke Color
Excess water on casing surface prior to smoke cycle.
Implement a 15–20 minute drying phase at +55°C (relative humidity < 60%) before admitting wood smoke.
Toughness or Lack of 'Knack' (Snap)
Overcooking, excessive casing thickness, or cold emulsion shock.
Select Darezini tender sheep casings (caliber 20/22 or 22/24) with low wall thickness and scald at exactly +78°C.
